White Bean Chili

A simple, brothy white bean chili built on a tub of fresh salsa and finished with a squeeze of lime.

Ingredients

For the chili

  • 4 to 6 cups vegetable broth
  • to taste garlic powder (1 tsp to start)
  • to taste salt and pepper
  • 1 lb white beans, cooked ahead (or 6 to 8 cans of mixed great northern and cannellini beans, partially drained)
  • 16 oz fresh salsa (from the produce section)
  • limes or lime juice, for serving

About as simple as a fasting supper gets: beans, broth, and salsa left to simmer until they meld. The longer it sits on the stove, the better it tastes.

Method

  1. Add all the ingredients except the limes to a stockpot.
  2. Simmer on low for 30 to 60 minutes; longer is better. Stir occasionally so nothing sticks to the bottom.
  3. Serve with sliced limes and tortilla chips.
